I have another yummy and healthy recipe for you. I've recently been trying out a bit of Paleo cooking. I know coconut balls a traditionally Christmas food, however this recipe was too good not to share.
Ingredients:
1/2 cup Prunes or Mejool Dates
1 cup Almond Meal
2 Tbsp Chia Seeds
2 Teaspoons Vanilla Extract
1 Tbsp Cocoa or Cacao Powder
2 Tbsp Freshly Squeezed Orange Juice or Coconut Oil
1/2 cup shredded coconut plus extra for rolling.
Method:
- Add prunes, almond meal, Chia seeds, vanilla extract, cocoa powder, coconut to a food processor and blend.
- Gradually add orange juice. Blend until mix begins to stick together.
- Place a small amount of coconut into a bowl to rolling mixture into balls.
- Using a teaspoon take small portions of the mixture and roll into balls. Place in bowl and cover in coconut.
- Try not to eat them all at once.
